Soprano Family Sunday Gravy

So I know I said a longggg time ago that I would post the recipe for Sunday Gravy. Well, it turns out that I might have had too much red wine and forgot what all I put in it….Here is the link to the recipe. DON’T FORGET THE NECK BONES. I’m serious. If you buy them at a grocery store, you’ll probably have to ask a butcher for them, but you will feel like the coolest white chick that has ever lived. I let mine simmer for 6 hours—the longer the better. I served with fresh linguine and rigatoni. Add fresh torn basil right on top, and some parmesan. If you have non-noodlers, give them a loaf of bread and let them go to town. Pork necks pictured below, just so I could show off how proud I was.  If you want to impress, make this. The sauce is even better three nights later for late night. Just saying. Peace

How the lonely can use their Leftovers

I personally hate leftovers. Unless it’s some form of carbohydrate covered in sauce, or tater tots. Leftover meat sicks me out (minus bone-in ribeyes–always welcome in my fridge). I spatchcocked (hehe) a whole chicken on Monday, and turns out that two people can’t eat a 4 lb chicken in one sitting, so we had lots of leftover chicken. Sidenote–I fully believe that eating 4 lbs of chicken is possible, and someday I plan on eating 4 lbs of chick-fil-a nugs….ON A SUNDAY. (Valentines Day is on a Sunday in 2016–just saying–best V-day ever)

Mexi Chicken Salad Stacks

  • 1 can of black beans, rinsed
  • 1 can salt free or low sodium corn, rinsed
  • 1 handful of cilantro, chopped
  • ½ tsp. onion powder
  • ½ tsp. garlic salt
  • ½ tsp. chili powder (or paprika if you don’t like spicy)
  • Leftover chopped chicken (2 cups)
  • 2 tbs. taco seasoning
  • ½ c. water
  • 2 tostada shells
  • ½ c. fat free black beans
  • Shredded Colby jack cheese
  • 1 cups chopped iceberg
  • 1 cup chopped spinach

 

  • Combine the first 5 ingredients and toss—there you go dummy, you’ve made a black bean and corn relish. Mazel. This stays good for a few days in the fridge, and you can put on anything (especially leftovers—I’m talking to all you single cat ladies out there)
  • In a skillet, heat water and taco seasoning. Add in the chicken and cook on medium heat until it has absorbed the liquid and gotten hot—prob about 5 minutes.
  • Slather the tostadas (slather sounds really creepy for some reason. Almost as bad as moist. Ew.) Anyways, slather them with the beans and cheese, and bake at like 350 until the cheese is melted.
  • Put your lettuce and spinach on the bottom of the plate, then tostadas, then chicken and then the black beans and corn. Drizzle with dressing (recipe below), and garnish with avocado. I promise you probably have half these ingredients already, so don’t be freaked out by the long list.

 

Cilantro Lime Crema

  • 1 bunch of cilantro, bottom stems removed
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 cups of Mexican table cream (cacique). Barf, hate the word cream too.

Combine all in your Vitamix (again, if you don’t have a vitamix, can you even afford to be reading this? How do you pay for wifi?). Takes about a minute to completely blend. If you want spicy, add in some Japs** or poblano peppers. Enjoy!

 

**Please don’t actually add in Japanese people—Add jalepenos. I am rather fond of sushi and don’t want to make any enemies.

 

 

Mondays Pho-cking Suck

It’s a fact. Mondays suck. I don’t care if you are Debbie Downer and do nothing over the weekend, I still assume that you hate Mondays as much as I do. They are the worst. The only thing that’s worse than Monday is a bad weather Monday. Rainy Monday = hibernation. This soup will make your Monday much better, especially if you have a cold or feel like sh*t. Also, I just said Monday 7  8 times in one paragraph. Pho-k you day after Sunday. Also, in no way is this authentic pho, or authentic anything. It’s fridge pho, and it is delicious

  • 32 oz. garlic beef broth
  • 12 oz. low sodium chicken broth
  • 2 chicken wings from a rotisserie chicken (ya, I’m serious)
  • ½ white onion, diced
  • 3 cloves of garlic, thinly sliced
  • Handfuls of- cilantro, basil, mint, sliced green onion
  • 1 cup of Asian noodles (like the kind from ramen)
  • 3 tbs. chili paste (sambal oelek) less if you’re a puss and don’t like hot stuff
  • 1 tbs. oyster sauce
  • 1 tbs. hoisin
  • 1 tbs. tamari (low sodium) or soy sauce

In a large soup pan simmer onions and garlic with 1 tbs. coconut oil until soft. Add in tamari, oyster sauce and 2 tbs. chili paste and coat the onions and garlic. Sautee for another minute. Add in the chicken wings and just let them sit with the mixture for like 4 minutes on medium heat. The chicken is already cooked, so you don’t have to worry about that, I just like the flavor. Add in broths and simmer for an hour. Cook noodles separately and put in the bottom of a big bowl. Top the noodles with the broth (discard the wings after an hour). Garnish with chili paste, hoisin and all the herbs. If you want to look like a badass, add chopsticks and a Chinese soup spoon and you’re golden.

Also—Have tomato soup and grilled cheese materials handy in case your significant other doesn’t really dig Asian. What’s that? You don’t have a significant other? Shit, sorry. This recipe makes enough for 2 with lots of leftovers….awkward. I hear match.com is having a sign up special?? Good Luck!
