Easy Pesto Zoodles with Goat Cheese

I wish I could claim that I love zoodles. But they will never be noddles. I don’t feel like I’ve had an incredible pasta dish, or some crazy good pad Thai when I use spaghetti squash or zucchini in place of a good ole nood, but in an attempt to eat lunches that resemble less of an overweight Italian man, I give you pesto zoodles. Now, if you don’t want to make homemade pesto, use store bought. If you want to use a different noodle substitute, mazeltov. Don’t like goat cheese? Use Parmesan, IDGAF.

If you want to use this as a side, I suggest serving it as the side for Bolognese or Chicken Parmesan Meatballs.

For the homemade pesto…combine the following in your Vitamix/cuisinart. This will make a ton more than you need, so either freeze the rest, or use it in another recipe…

  • 2 cups fresh basil
  • 3/4 c. Olive oil
  • 1/2 c. Parmesan cheese
  • Juice of 1 lemon
  • 1/3 c. Toasted pine nuts (or toasted blanched almonds, toasted pecans, etc.)
  • 3 cloves garlic
  • salt and pepper to taste

For the zoodles, I sauted one package of Cece’s Veggie Co. Noodles-Zucchini Veggiccine. They have all sorts of different zoodle types and I’m 99% sure that if we have them in Midland, you have them at your grocery store. Just sauté with  a splash of olive oil for 3 minutes until they are soft. Add in 2 tbs of the pesto and cook for another minute until well combined and top with crumbled goat cheese and crushed red pepper. One package serves one as a big vegetarian meal, or 2 as a side.

Quick tomato soup–because the baby is STARVING, right?

I’ve been in the mountains in North Carolina for 2 weeks, and have basically binged every night. Everyone in my family can cook, and we have all taken turns trying to fatten the others up. Basically, we all want the other sisters to get fat so that we can take our turn basking in the light that is the most attractive sister title. Since I am 35+ weeks pregnant, clearly I don’t give a sh*t about that title. I just want to grub and sleep. The fam went out to dinner the other night, and as much fun as being the sober one is, I let others take that title and be the DD for the night, and I settled in for a solo dinner at home and a “Married to Medicine” marathon. #teamQuad

I wanted a grilled cheese and ketchup, but the ketchup in the farm fridge was several years expired, so I had to find an acidic alternative. Cue the easy “homemade” tomato soup. You most likely have all three ingredients in your fridge already, so easy! Sidenote: I don’t actually like tomato soup, I just use it as a dip for my grilled cheese. So I think this is a good soup, but it could totally suck as a non dip. Either way, I don’t really care since I’ve already eaten it.

 

  • 1/2 C. tomato sauce (I used Rao’s tomato basil, but if you’re poor and have to use Ragu, just don’t tell anyone).
  • 1/2 C. chicken broth (use low sodium–you don’t need to swell any more than you already do)
  • 1 tsp. heavy cream or milk

Mix everything together and microwave for 2 minutes. Voila. I have nothing funny or creative left to say–the he/she/it that has hijacked my body and is currently using my lungs and belly as a punching bag has exhausted me, and it’s time for snack #4 of my day.

B4D-Mexican Style

This is one of those “semi-homemade” meals… I made it when I was exhausted, and honestly did not want to cook, but I had food in the fridge, and always feel guilty eating at a restaurant when I have food at home. Plus, it was a Wednesday, and we all know that the Midland Chili’s has a bitch of a wait on Wednesdays. So, since I had leftover salsa from the previous night’s dinner, I went mexi. This serves one–I don’t really love Mexican breakfast, so I had quinoa fried rice. I’m assuming my readers (all 4 of you) know a little bit about math, or have a calculator on your iPhone, so just multiply.

  • 2 Tostada shells
  • 1/2 c. non fat refried black beans (don’t like black beans? Racist. JK, used whatever you want)
  • 2 fried eggs
  • dollop of guac
  • salsa
  • green salsa for the plate if you want to get pretty
  • fat free white cheddar or mozzarella cheese

Literally layer it all together, just follow what my picture looks like, and you will have a happy man/wife/dog that gets your leftovers!
